LIBERATED BY DRINK AND SMOKE

Boil a cup of Pu’erh tea with .5 tsp. of 5-Spice Powder and 1/4 cup of tamarind paste. Stir until well blended and while still hot, add 1 cup of brown sugar. Stir until all sugar is dissolved. Let cool. Strain out the solids and chill. Take a clove of star anise* and light the end on fire until it really starts to smoke. Invert a rocks glass over the smoking anise so that it gets cloudy and let sit while you:

Add to your shaker:
• 1.75 oz. One Eight Distilling “Untitled #11” Bourbon
• 0.75 oz. Pu’erh-Brown Sugar-Spice Syrup
• 0.5 oz. fresh lemon juice*
• 0.25 oz. Ginger juice
• 2 dashes of Aromatic bitters

Fill with cracked ice and shake for 5 seconds.

Doublestrain** into your smoked glass over 1 large piece of ice. Garnish with a lemon peel, oils expressed over the glass at a 45 degree angle and your singed clove of star anise. *Hand squeezers are pretty ideal for single serving juicing. I generally like most tools by OXO. You’ll want to peel the lemon before juicing so you can use it for garnish later. **Double-straining refers to straining into a fine mesh strainer so the ice shards and pulp & don’t end up in your drink or in your teeth. While certainly an optional method, it also mildly slows the dilution rate of your drink as it sits.


THE RED ROOSTER MOCKTAIL

Add to a saucepan or small pot, 1 cup of pomegranate juice, 1 cup of sugar and 6  cardamom pods, lightly crushed. Simmer until all the sugar is dissolved and let cool. Chill a Collins or Highball glass.

Add to your shaker:
• 3 halved cherry tomatoes
• 3 cubes of watermelon

Muddle your fruit until it’s all sort of squishy.

Then add:

• 1 oz. Pomegranate juice
• 0.5 oz Cardamom-Pomegranate syrup

Fill with cracked ice and shake for 5 seconds.

Double-strain into your glass with fresh cracked ice. Top with 3 oz. of coconut water. Garnish with fresh mint** & thyme and fruit. **Whenever garnishing with mint or broad leafed herbs, rub them a touch to open up their aromatics more
